Recipe: Carrot and Coriander Soup

This is one of the all time classic soups with 2 ingredients that are a match made in heaven. The recipe is incredibly simple and this is a great way to use up any leftover carrots.

Cooking Method

  1. Peel and cut the carrots and dice the onion.
  2. Add the oil to a pot and put over a medium heat. Add the onion and carrots to the pot and cook for 4 minutes.
  3. Peel the potatoes and cut into small cubes. Add them to the pot with the ground coriander. Cook for 5 minutes.
  4. Add the vegetable stock and simmer for 15-20 minutes
  5. Remove the soup from the heat and put it into a blender with the fresh coriander. Blend until smooth.
  6. Add some cream and salt to the soup and blend for 30 seconds. Serve with crusty bread

  • 5 carrots
  • 1 onion
  • 2 potatoes
  • 2 Tsp butter
  • Bunch of fresh coriander
  • 1 tsp ground coriander
  • 2 tsp vegetable oil
  • 2 vegetable stock cubes
  • pinch of salt
  • 200 ml cream
