I recently bought some Drumlin cheese at our local farmers' market and it is divine, as always. I've been enjoying it for breakfast most mornings on toasted sourdough - such a delicious way to start the day. Drumlin is a raw cow's milk cheese made by the people at Corleggy Cheeses. Corleggy was started in Cavan in 1985 by Silke Cropp, using milk from her goats. These days, Corleggy makes a number of different award-winning cheeses. Corleggy itself is a hard goat's cheese; there is also a smoked version. Drumlin comes in a number of different varieties, including smoked, garlic and even seaweed. Quivvy is a fabulous cheese. It's a goat's cheese that's only available during the summer months. Quivvy is preserved in Greek kalamata olive oil with sun-dried tomatoes. It would make a perfect addition to a simple salad of tomatoes, olive oil, basil and some lemon juice. Corleggy cheeses are available at food shops, delis and farmers' markets across the country.
